Strawberry Reduction Syrup

1/2 lb – strawberries (remove tops)
1 cup – swerve sugar
3 tbsp – lemon juice
Smash strawberries well in a bowl (I use a potato masher) then add to sauce pot, add sugar and lemon juice and on low heat until sugar dissolved.
Once dissolved, turn heat to high and bring to a boil, stirring often. Boil for 3-5 minutes.
I use this as an additive in baking & syrup on keto pancakes!!

Would this store well in the fridge or would it need to be eaten pretty quickly?
It stores really well, I keep it in an airtight jar/container in the fridge. It will crystalize as it cools but will return to liquid state quickly with heat. I don’t mind it as a spread when its crystalized.
