Fat Head Crackers

If you enjoy fat head pizza crust then you’ll love fat head crackers. Wicked easy to make and super delicious ❤️ it definitely eases that craving for a carb loaded dipable cracker.
INGREDIENTS:
1 1/2 cups – Mozzarella
1tsp – Xanthan gum
2 tsp – Baking powder
3/4 cup – Almond flour
2 tbsp – Cream cheese
1 – Egg
Seasonings!
Melt cream cheese and mozzarella cheese in a microwave safe bowl for 30 seconds (remove and stir) heat another 15 seconds if necessary watching not to burn the cheese. Add remaining ingredients and blend well. Line a baking sheet with parchment paper and spread out your dough to a nice thin cracker thickness (wet fingers make this much easier as it sticks to you less). Sprinkle seasonings of choice on top (my favorite is Trader Joe’s everything but the bagel).
Bake for 25 minutes at 425 degrees (I like to flip it half way through cooking to brown both sides). Remove and cut into squares with a pizza cutter (because it makes it much easier and you get nice symmetrical squares).
Store in an air tight container for up to a week.

These came out so good! First truly crispy crackers. I did sub coconut flour because we’re out of almond flour and live in the sticks so can’t easily get. And I forgot the sub is usually 1/4 c. coconut to 1 c. almond, so accidentally used 1/4 c. coconut flour. Turned out great. Cut them with a glass to make big round toppable crackers for our egg salad obsession! Thanks for a great keeper recipe!
