Cheesy Mushroom & Zucchini Saute’

This is one of my all time favorites and it came together on a whim one night. My husband wanted pizza (the delivery kind) and I was attempting to resist the urge to splurge (yep sometimes I rhyme like that) so I raided the refrigerator to see what we had.
It’s incredibly filling and a little goes a long way! Enjoy!!
Recipe:
2 lg – zucchini with peel
1 lb – baby bella mushrooms
1 – minced garlic
1 tbsp – lemon juice
2 tbsp – garlic power
1 tbsp – onion powder
2 sprinkles – pink hemalayan salt
2 tbsp – butter (I use Kerry gold)
1 cup – pasta sauce (I use raos) use more or less to taste
Mozzarella cheese for topping
Directions
Dice zucchini and mushrooms, add butter to skillet with garlic until hot (it’ll sizzle) add zucchini first and sauté until it has warmed and been covered in butter then add the mushrooms (I add them second because I don’t like them mush, they don’t take as long to cook, and they’ll become very watery if you over cook them) then add garlic powder, onion powder, salt, and lemon juice. Continue to sauté until you achieve your desired level of “doneness” with the veggies. Add the pasta sauce and combine well. Plate, top with cheese. (I microwave it for a few moments because I’m impatient) and enjoy!!
