Blueberry Reduction Syrup

I use this as an additive in baking & syrup on keto pancakes!!
2 cups – Blueberries
1/2 cup – Swerve granulated sugar
1 tbsp – lemon juice
Smash blueberries well in a bowl (I use a potato masher) & then pour into a blender, pulse once (if you pulse more you’ll end up with just juice) then add to sauce pot, add sugar and lemon juice. Cook over low heat until sugar dissolves (this is important you don’t want to make a goopy caramel consistency sauce).
Once the sugar has dissolved, turn heat to medium-high and bring to a boil, stirring often. Boil for 3-5 minutes.

I made this and it is delicious! Perfect on pancakes!
