The buttery, garlicky, bright flavor of scampi sauce with the mild heart of palm noodles is a taste buds paradise. What a perfect combination!
2 tbsp – Kerry gold butter
4 cloves – minced garlic
2 tbsp – olive oil
1 tbsp – ground pepper
1/2 cup – chicken stock
1 tsp – red pepper flakes (optional)
Dash – salt
1 lb – peeled deveined shrimp (I remove the tails but ok to leave them on)
1 lb – heart of palm spaghetti
In a sauce span melt butter and olive oil, add garlic and sauce until fragrant (careful not to burn). Add chicken stock, pepper, salt, & pepper flakes and reduce to half (about 2-3 minutes).
Once scampi sauce is complete add peeled deveined shrimp and cook until shrimp begins to pink to desired shade. Reduce heat to low and add spaghetti, tossing until warm.
Remove and serve immediately. Enjoy.
Optional: Grated Parmesan cheese on top!
