2 bags – bagged cauliflower florets, frozen
3 tbsp – Kerry gold butter
9 tbsp – heavy whipping cream
8 oz – sharp cheddar, shredded (bagged cheese uses starches to keep it from clumping)
Dash – salt
Steam cauliflower in microwave as directed, unbag and drain. On the stove top over medium heat melt butter, then add cheese and melt (if you try to do this too quickly on high heat you’ll burn the cheese and it will be clumpy and gross), stir continuously. Once melted add heavy whipping cream and salt and blend until smooth. Place cauliflower in baking dish and top with cheese mixture, mix around. Place in oven st 350 for 30 minutes.
Pearl of wisdom: Bagged shredded cheeses use starches added to keep them from clumping. I shred my own cheese to avoid these added starches ❤️ I found the best tool to do this quickly and without wearing out your arm muscles is the rotary grater!
